Starters
Blood grape marinated pikeperch from Lake Sommen
The pikeperch is marinated in blood grape to give it a fresh flavor.
To enhance taste and color, we have topped the dish with
a few extra slices of blood grape.
Perfect accessories are a smooth homemade shrimp paté
and pea puree.
Fresh, healthy and tasteful!

Marinated deer with blue cheese
The deer from the forests of Östergötland, we have marinated.
The flavour of the deer is nicely met by the mild blue cheese
from Brostorp farm.
The dish is served with fresh pomegranate seeds and roasted sunflower seeds
and placed on a bed of arugula salad.
Wine suggestion:Pinot Noir, Frankrike
Pheasant breast with chanterelles
A few slices of pheasant breast are placed on
a slice of lightly toasted dark rye bread.
Served together with chanterelles from our surrounding forest
and a creamy chanterelle-flavored cream sauce,
gives a wonderful taste of ‘the forest's gold’.
Brussels sprout leaves filled with
raw-stirred lingonberries give a fresh flavor.

Main courses
Perch from Lake Sommen
From our own fisherman Anders, we’ve got this nice perch.
It is lightly fried and served with a potato duchesse.
flavored with herbs from the plains of Östergötland.
A soft and creamy sauce with artichokes and fresh lemon marmalade
from the farm Hargodlarna completes the taste.
To accomplish this dish, we serve
baby carrots, sweet snaps, radish and green onions.

Ostrich tournedo from Vikbolandet
The tender and mild flavor from the breast fillet from Östergötland,
is served with a creamy potato gratin with Östgöta potatoes,
filled with tasty cheese from Boxholm.
The sauce, flavored with blackcurrants, gives a fruity freshness.
This dish is served with asparagus broccoli,
oven-baked cherry tomatoes and locally grown blackcurrants.
Wine suggestion:Cote du Rhone, Frankrike
Roe deer fillet from the forests of Östergötland
Here we offer all the wonderful flavours of the forest.
Roe deer fillet from the forest is served with
a creamy sweet potato muffin, flavored with herbs.
A red wine sauce flavoured with blackberries accompanies perfectly.
Crispy kale chips and oven-roasted red peppers complete the dish.

Home-baked bread and butter are served with all hot dishes
Desserts
White chocolate mousse with raspberry sauce
This creamy white chocolate mousse is a delight for the taste.
It is served with homemade raspberry sauce and gingerbread crunch.
This will be a lovely finish to a perfect dinner!
Lemon curd pie
A short crust pastry shell is filled with soft vanilla cream.
The whole dessert is covered with fresh lemon curd and
garnished with fresh berries.
A delight for both the eye and the palate!
Homemade ice cream of fir buds
A dessert from the delights of the forest!
Not many have tasted the mild and fresh taste of fir buds
from the forest's wonderful pantry.
This different ice creme is made by Sänkdalen's organic farm.
Together with this special ice cream, we serve a trio
of homemade chocolate in exciting shapes.
